Hoopenburg - Chardonnay 2011

Wine notes

The bunches were whole bunch pressed for 3 hours. The grapes come from bush vine ensuring concentrated flavors and best expression of terroir. The wine was barrel fermented in French oak barrels, which adds another layer of complexity and flavor to the wine. The wine was aged on full ferment less for 12 months with no malolactic fermentation, resulting in depth and complexity while maintaining a good balance of acidity. There was minimal bottonage and no racking. The wine was matured in 1st fill (35%), 2nd fill (30%), and 3rd (35%) fill French oak barrels 

Tasting notes

The wine has fresh apricots and citrus on the nose with hints of vanilla. On the palate the wine is round, soft bodied, and well balanced with a lingering limey texture.

Hoopenburg - Red Blend 2010

Wine notes

This is a blend of Syrah (36%), Mouvedre (36%), and Carignan (28%). The grapes were destemmed, without crushing and tipped into an open tank under carbon dioxide. The grapes were then cold soaked to ensure maximum flavor extraction for 10 days.This use of wild yeast in the wine allows the terroir to be best expressed though the wine. The wine was barrel fermented in 1st and 2nd fill barrels and were then matured in oak barrels for 18 months.

Tasting notes

On the nose there are hints of mulberries and whiffs of cinnamon. There are also notes of dried herbs and liquorice with very subtle spices in the background. The wine is fruit forward at first, with a structured mid-palate, with silky savory tannins.

Wine notes

This is made in the traditional Methode Cap Classique (Methode Champanoise) method. The wine is made from 100% Chardonnay grapes. All the grapes come from the vineyards at Hoopenburg. The wine spent 15 to 18 months on the leasebefore disgorgement. The grapes were harvested at 19 to 19.5 Balling.

Tasting notes

The wine is a typical champagne color, with a very fine, lively mousse. The nose has Granny Smith apple fruit complemented by yeasty dough and biscuit aromas. The palate is as lively, with a creamy balanced finish. The wine pairs well with a wide range of foods from cheese, seafood, salads, and pastries.
